FRESH REC STOP RECIPE: SUMMER GRILLED CORN SALAD

This Summer Grilled Corn Salad is one of those salads that just has so many layers of flavor. Not only is it full of flavor but each element of the dish is good for you as well. Grilled corn is a summertime staple, this salad brings together the best parts of the summer.

  • Corn has just over three grams of protein per ear. Compared to most vegetables, corn is higher in protein. That’s because corn is technically not a vegetable at all, but rather a whole grain.
  • Basil contains powerful essential oils, including eugenol, citronellol and linalool. Basil contains phytochemicals, which can help naturally prevent cancer, including chemical-induced skin, liver, oral and lung cancers.
  • Feta cheese is the most well-known cheese in Greece. It is a soft, white, brined cheese that is very nutritious and is an excellent source of calcium. An ounce of feta cheese contains 25 milligrams of cholesterol, making it one of your best choices in the soft cheese category.
