FRESH REC STOP RECIPE: WATERMELON AND CHIMICHURRI

By Garrett Simpson, Community Health Leader

This is a recipe that is all around just good for you. With the summer coming to an end, we should take a moment and appreciate the sweet and tangy combination. Watermelon is in season and is very nutritious.

  • Watermelon contains an antioxidant called Lycopene. It is linked to decreasing risks in cancer, heart disease, and age-related eye diseases.  It is also the compound that gives our favorite fruits and veggies their red color!
  • Chimichurri is a green sauce that originates from Argentina. The exact origins of chimichurri are unknown, but it is believed to have been created by the gauchos (Argentinian cowboys) in the 19th century. These cowboys would often spend long periods of time on the open plains, cooking their meat over an open fire. Little did they know that this sauce taste amazing on fresh fruits as well.
